1 Pound A Day Sweet Cabbage Soup 3 qts distilled water ½ head of cabbage (shredded) 2 chopped onions 2 celery stalks (chopped) 2 chopped sweet potatoes ½ tsp basil ½ tsp thyme 2 cloves of garlic (minced) 1 bay leaf Add distilled to large pot. Add all veggies (peel sweet potatoes first) Bring to a boil then simmer covered for at least two hours. Add all seasonings and simmer for an additional 30 minutes. Parsnip Spinach 4 parsnips peeled and sliced 2 bunches or 2 cups of chopped spinach 2 onions- chopped 1 small sweet potatoes chopped small or in cubes 2 leeks-sliced 1 garlic clove- minced 1 tsp curry powder ½ tsp ginger powder 3 cups distilled water No salt, cayenne pepper to taste. Add water to pot. Add all ingredients and bring to a boil. Reduce to low heat and simmer for 2 hours, until all veggies are tender. Add 1/4 cup of the broth in blender and Puree.
Pumpkin is a great holiday vegetable. Great holiday spices are cinnamon, nutmeg, vanilla extract and cloves. Pumpkin Soup- 8 cups veggie stock, 4 cups of pumpkin, peeled& cubed, 2 sweet potatoes, peeled, 2 carrots largely sliced, 2 garlic cloves; minced, 2 tiny scoops of Stevia, ½ cup parsley, finely chopped, Pumpkin Pie spice, 2 tbs. vanilla extract ¼ teaspoon. Pour stock into large pot and add pumpkin and all ingredients. Boil until tender (about 1 hour). Cool slightly and puree.
Butternut Soup 1 cup chopped onion 1 celery stalk, chopped 1 bay leaf ½ teaspoon ground ginger ½ teaspoon ground turmeric ¼ teaspoon ground cinnamon 1 butternut squash (2 ½ pounds) peeled and cubed 1 large sweet potato peeled and cubed 4.5 cups vegetable broth Add all ingredients in large pan to boil. Cover heat to medium simmer for 15-20 minutes or until veggies r tender. Take off heat and cool slightly & take out bay leaf. Puree everything in batches in blender.
Zucchini Carrot Soup 1 large Spanish onion- chopped 4 large carrots- sliced 2 large zucchini- sliced 2 stalks of celery- sliced 2 tbsp minced fresh parsley 1 bag of shredded green salad mix 1 tsp no salt vegetable seasoning or Braggs amino acid to taste after cooking 1/8 tsp red pepper 8 cups distilled water Put all ingredients in a pot and bring to a boil. Reduce heat and simmer until all veggies are cooked thoroughly. Add 1/4-1/2 cup of the broth and Puree.
Curried Vegetable Soup 1 qt. distilled water 1 cup carrots, chopped 1 cup mixed greens, chopped 1 cup yellow zucchini, chopped 1 cup green beans, chopped 1 green onion, chopped 4 cloves garlic 1 tsp. curry powder 1 tsp. turmeric powder ¼ tsp. (of each) ground cinnamon, nutmeg, ginger and cayenne powder mixed together Pour distilled water into sauce pan. Add all other ingredients, including spices, and boil until vegetables are tender, add broth and puree...Enjoy!
VEGETABLE BROTH/STOCK 12 Cups Distilled Water 3 carrots sliced 2 turnips, sliced & diced 2 zucchinis, sliced 2 leeks, sliced Garlic to taste 2 celery stalks, sliced 1 small lettuce, chopped 4 bay leaves 1 orange peel, minced A few parsley sprigs, tied together Red cayenne pepper No Salt vegetable seasoning to taste Put all the ingredients in a large stock pot bring to a boil. Boil 30 minutes stirring from time to time. Reduce heat medium-low stir, cover for 2 hours.
Still Summer Soup 2 bags of string beans (fresh) 4 small zucchinis (chop) 2 onions (chop) ¼ cabbage head (slice) 1 sweet potato (dice) Tumeric (to taste) Dijon Mustard (to taste) 4 quarts Veggie stock or distilled water Add all veggies and stock or distilled water to large pot. Spiced Carrot 5 qts distilled water 18 carrots-sliced 2 cups of mixed greens –coarsely chopped 1.5 head of romaine lettuce – chopped 2 large sweet potatoes – chopped after peeling 2 tsp ginger root – peeled 4 tsp of following mixture: cinnamon, clove, nutmeg, and Stevia 2 tsp vanilla extract Bring all ingredients to a strong boil in a large pot. Reduce heat to a slow boil for 45 minutes. Separate solids and broth. Cool slightly & puree solids with ¼ - ½ cup broth.
