Seared Scallops with Apple Cider-Balsamic Glaze - pretty tasty. My first attempt at scallops. Omitted mushrooms, and used apple juice instead of cider. Be careful to not over-salt the spinach. After adding the bacon, you get a good bit of extra saltiness.
