Paris-Brest and mousseline are two of the mainstays of French pastry. Paris-Brests are made with very crisp choux pastry enriched with almond flakes. Mousseline is a sort of cross between pastry cream and butter cream. The original version of Paris-Brest calls for a pralinated butter cream filling, which is too rich for my taste. I used a lighter mousseline cream and pralinated it for a flavour and aroma that could closely match that of the original Paris-Brest. Oui, j\'adore!
