One of the cowgirls I met said she struggled for ideas at mealtimes because the men weren't overly keen on eating veg. However, she did say one of the things they would eat was broccoli salad. Every diner and restaurant in Cody seemed to have one on the menu, so I created this version, which is absolutely delicious and hits all the right spots. When I cooked it for a group of ranchers there was none left by the end of the night. Success!

This is a really quick and simple meal that's perfect for a midweek supper. I've used olives to add a bit of saltiness and extra flavour, but feel free to throw in whatever you've got in the cupboard that'll do the same job – anchovies or sun-dried tomatoes would work well.

Things like strawberry and lychee martinis are delicious but they can also be quite dangerous because you might not realize how much you're drinking, so beware. But enjoy!

Rotolo is definitely one of the more unusual pasta dishes that you'll see – many people have never eaten it before. The way I've prepared mine means it kind of feels like eating a lasagne or a cannelloni, but it looks really pretty and you get the gnarly crispy bits of pasta on the top, complemented by the softer pasta hiding underneath the sauce.

Chicken cacciatora seems to be reasonably well known in Britain because it's the classic pre-packed dish you find in Italian food ranges in supermarkets (which, to be honest, never taste of much). When you get the real deal cooked at home with love and passion it's a totally different experience. It's a simple combination of flavours that just works really well. Cacciatore means 'hunter', so this is obviously the type of food that a hunter's wife cooks for her fella when he gets home from a…

This is a fantastic dish from southern Italy that's eaten as a warm vegetable side dish or a cold antipasto. Sicilians are proud that it's made with produce from their island. All the different methods of making it are more or less the same – the things that make it stand out and be special are the quality of the aubergines, tomatoes and vinegar. Always try to get hold of nice firm aubergines with very few seeds – have a look down in your local market to see if you can find different…
