Parsley Butter - Ingredients: 6 tbsp salted butter at room temperature, 2 tbsp. minced shallot (1 small shallot), 2 tbsp minced parsley,2 tsp freshly squeezed lemon juice,1/4 tsp salt,1/8 tsp freshly ground black pepper. Direction:Combine butter, shallot, parsley,lemon juice,salt and pepper in a medium bowl; blend well to distribute ingredients thoroughly. Spoon seasoned butter onto waxed paper, roll butter to form a log. Refrigerate until chilled, at least 2 hours and up to 1 week.
Roasted Garlic Butter with Chives Ingredients: 1 cup unsalted butter at room temperature,2 heads(or more) roasted garlic,1 tbsp chopped chives,1/2 tsp salt. In a bowl, combine all the ingredients and mix well.Take a large piece of parchment paper and pile the butter at one end of the paper forming it into a log as best as you can. Begin rolling the paper and the butter up, jelly-roll style, rolling tightly as you go and smoothing the log. Wrap in plastic wrap and refrigerate until ready to use.
Cranberry Butter - Ingredients:3/4 cup butter(no substitutes) softened,1 tsp grated orange peel,1 dash almond extract,1 cup whole berry cranberry sauce. Directions: In a small mixing bowl, cream butter, orange peel and almond extract. Beat in the cranberry sauce until blended. Store in the refrigerator
