A Year of Slow Cooking: Slow Cooker 20 to 40 Clove Garlic Chicken--This won't have a lot of carbs, as is.  Remove the skin if you're worried about fat, needless to say.  So low in carbs, you could enjoy a little stuffing on the side, if you like.  Or serve with a simple dinner roll.  (Hint:  Take that skin you aren't eating and make some broth.  Skim off the fat.  Yummmm.)

Baked red gurnard with roasted vegetables  Serves: 4 Preparation time: 20 minutes Cooking time: 15 minutes  You will need 575g fillets ½ red onion, finely chopped 1 clove garlic, crushed 3  tablespoons olive oil 55g dried breadcrumbs 30g sun blush tomatoes, chopped 1 tablespoon fresh chopped thyme Salt and black pepper 1 red pepper, deseeded and roughly chopped 1 yellow pepper, deseeded and roughly chopped 1 courgette, trimmed and roughly chopped
